Kiwi smoothie

Last week I had bought lots of kiwis from the grocery store. And they had become ripe and I wanted to use them before they went bad. So, made this smoothie coz smoothies are simple and easy to make and the best way of tempting kids to consume fruits.KIWI SMOOTHIE

Ingredients:
2 ripe bananas,
2 kiwi,2 cups of cold milk and
2 tbsp of honey.
Method:Place all the ingredients into a food processor or blender and blitz until smooth and creamy.Serve chilled .

Note:
Sugar can also be used instead of honey.Tastes best when served chilled.Its award time again...I am very delighted to receive these bunch of award from my blogger friend Suhaina who blogs at My Singapore Kitchen... Thanks a ton Suhaina for these awards.

Pazham pori /Ripe Plantain fritters

Pazham pori -a very popular snack of Kerala,India. This popular snack reminds me of my summer holidays when we used to visit our grandmother and aunts in Kerala and we were pampered with yummy treats and snacks.As a child I would eagerly wait for tea time to taste this yummy snack which my grand mother or my aunts would make. Its easy to prepare and tastes very yummy.

PAZHAM PORI

Ingredients:
2 ripe plantains,
1 cup of maida /all purpose flour,
2 tbsp of rice flour,
3-4 tbsp of sugar,
1/4 tsp of baking soda,
a pinch of salt and
oil for frying.

Method:
Cut the plantains into half and then with each half cut 3-4 thin slices lengthwise. In a bowl, make a batter with all purpose flour, rice flour, baking soda, sugar and salt. Heat oil in a frying pan, dip the plantains in the batter and coat hem with it, deep fry 2-3 pieces at a time until crisp and golden brown. Remove and place the fritters on a paper towel to drain excess oil. Serve hot as a snack with tea/coffee.

Stir fried Tuna with spices/ Tuna chikkiyathu

A few weeks back, I saw a tuna recipe on my friend Shab's blog- Shab's Cuisine. And I just loved the Indian way of using Tuna with all the spices in it.. Though I am not a big fan of Tuna..I wanted to try her version, because it looked spicy and yeah..another reason was that I wanted to finish the Tuna cans I had for month ;-) And when I tried her recipe, it turned out very tasty and spicy and Iam sure going to make it again and again. Thanks Shabs for this yummy recipe..I cooked it accordingly, only used vegetable oil instead of coconut. One can refer Shabs recipe here.

STIR FRIED TUNA

Ingredients:
3 tsp vegetable oil,
1 finely chopped onion,
1 finely chopped small tomato,
370 grams of canned tuna/ 2 small cans,
1/3 cup grated coconut,
1tbsp of red chilli powder,
1/2 tsp black pepper powder,
1/4 tsp garam masala powder,
few curry leaves and
salt to taste

Method:
Heat the oil in a pan and add the curry leaves and chopped onions. Saute till the onions turn light brown in color. Add the chilli powder, then the chopped tomatoes and some pepper powder. Cover and cook on low flame till the tomatoes become soft and the masala becomes thick. Drain the tuna and add it to the pan and mix it well to blend the masala with it. Cook for 10 minutes or until all the water evaporates and it becomes dry. Add the grated coconut and mix again and lastly add the garam masala and cook for few more minutes. Can be served with roti and can also be used as a filling for sandwiches as I did.

Back to blogging with loads of awards from friends :-)

Hi dear friends,
I am back to blogging(finally) Phew!!! This blogging world is so wonderful and addictive and what makes it wonderful is the beautiful bond one shares with the good friends we makes through the journey of blogging. I just wanted a small break from blogging during the month of Ramadan, but I that small break turned into a very long break of more than 2 months :-( I was finding it so hard to get back..everyday I would tell myself that I am posting a recipe today no matter what happens...but, then I kept postponing it each day for weeks and months. But what matters for me now is that I am back finally and I want to thank all my friends out there, who showered on me so many awards,even when I was away from here and YES !! these ''awards'' have forced me to come back and start again. Thank you friends for all these awards and for all the appreciations that keeps me going and brings a smile on my face :-)

Now coming to the awards, Priya darshini of Priya's feast have passed this beautiful and colourful award. Thanks priya for this beautiful award.

Sambousik al dajaj /Chicken pies and awards


CHICKEN PIES

Ingredients:

For the dough:
1 1/2 tsp active dry yeast,
1/4 cup warm water,
3 cups of all purpose flour,
4 tbsp of corn flour,
1 tsp salt,
3 tbsp melted butter,
1 beaten egg and
3/4 cups of water.

For the filling:
1 cup shredded cabbage,
1 cup finely chopped green beans,
2 chicken breasts- boiled and shredded,
1 green pepper-diced,
1 onion-finely chopped,
2 cloves of garlic- crushed,
3 tbsp of vegetable oil,
1 tsp of white pepper powder,
1 tsp of salt and
2 egg yolks for brushing.

Method:
In a large bowl, dissolve the yeast in the warm water.Add melted butter and beaten egg to this yeast mixture. In another big bowl, take all purpose flour, corn flour and salt and mix well.Now add the above yeast mixture to it and add the remaining water gradually and knead for 5-8 minutes until the dough is smooth and elastic. Cover the dough with a damp cloth and set aside in a warm place for at least 1 hour or until the dough has doubled in size.
In the mean time, start making the filling.Heat the oil in pan and stir fry all the vegetables- Beans, cabbage pepper, onion and garlic until they become tender. Now add the cooked and shredded chicken and season with white pepper and salt and stir for 2-3 minutes. Set aside to cool.
Preheat the oven to 200 C/400 F. Divide the dough into 30 small equal balls. Roll out each ball on a lightly floured surface, into 4 inch circles. Place a tablespoon of the filling in the center of each circle and brush the sides with egg yolk and cover each circle with another circle of the dough. Pinch the edges together with a fork to seal and brush the top of each circle with egg yolk.
Bake for 20-25 minutes or until light brown. Arrange in a serving dish and serve hot.

Tabbouleh/ Parsley and cracked wheat salad

TABBOULEH

Ingredients:
4 cups finely chopped parsley,
1/3 cup finely chopped fresh mint,
4 firm tomatoes- De-seeded and chopped,
4 tbsp fine burghul/bulgur,
1 small onion-finely chopped,
1/2 cup lemon juice,
1/2 cup olive oil,
1/4 tsp black pepper powder,
1 tsp salt and
Romaine lettuce for garnishing.

Method:
In a small bowl, mix the chopped onion with salt and black pepper powder and keep aside.Rinse the the burgul and drain in a fine strainer to remove excess water and transfer into a large bowl.
Add the finely chopped parsley and finely chopped mint leaves to the bowl, add tomatoes, lemon juice, seasoned onions and olive oil. Season again to taste if necessery.
Place some lettuce leaves on a serving dish/ plate and transfer the salad to this serving dish.
Serve with barbecued meat/chicken or serve on its own :)

Strawberry and watermelon cooler

STRAWBERRY AND WATERMELON COOLER

Ingredients:
1 cup watermelon (only the red part),
1 cup of strawberry,
1 tsp of sugar and
few ice cubes.

Method:
Put all the above ingredients in a blender and blend till smooth. Serve chilled.

I just try to think of all the good thing GOD has given me and thank him for that. And just seeing the cute and innocent smile at my son's face cheers me up.

My first Award :D

1. I am 23 years old, happily married from 4 1/2 years :) and mother of a 2 year old. And I love to cook for my husband and my son.

2. I am very very talkative. People around me never get bored ;) Or should I say they get bored of my talking so much ;-) I don't make friends easily :( But, I must admit that I have made many friends here :)

3. I am half Keralite and half Bangalorean. But, I am born and brought up in Bangalore.

4.
I am crazy about collecting recipes. I started collecting recipes from age 14. Whenever i used to see recipes in newspaper or any magazine, I used to write the recipe in my book and stick the picture of that recipe to my book. Thus, I have many books like this and lost many more when moving from US to UK :(

5.
I am not a big foodie .I eat everything except KARELA .But, I love cooking very very much. Right now I have this craze about learning international cuisines :)

6.
I like learning new languages. Right now I know to speak and understand these- Hindi, Urdu, Malayalam, Kannada, Arabic, English(US and UK) and very little bit of Tamil.

7.
I love traveling and sight seeing. I have visited many states in US, while living there. And my dream destination is Saudi Arabia, Switzerland, Italy, Paris and the list goes on...But, I miss my INDIA very much :( No place in the world can be more beautiful than your homeland.
